When I was a single mom raising a couple of picky eaters, glazed chicken breakst was my weeknight go-to recipe that everyone would eat. At the time, all I did was mix honey and mustard in equal portions, slather it on frozen chicken breasts and bake. Trust me, this recipe is better and not much more complicated! My kids still love it and I’m working on the grands – they are pickier than their parents.
Try it with any of the jellies, but Peach Habanero is my favorite with chicken! So yummy!
(Hint: It is equally delicious with pork chops cooked the same way).
Ingredients:
- 1/4 cup MRS.G'S Peach Habanero jelly
- 3 Tablespoons butter or olive oil, plus some for grilling
- 1/2 to 1 Tablespoon Dijon mustard
- 1 Tablespoon soy sauce
- Salt and pepper to taste
- 8 split chicken breasts, bone in
Prep Time: 20 minutes
Servings: 8
Instructions:
- Preheat grill. Brush the chicken breasts with olive oil and generously sprinkle with salt and pepper.
- Prepare glaze: Heat the first five ingredients in a saucepan until well incorporated. Put aside.
- Grill the chicken skin side down until golden brown, about 7 minutes. Turn and continue cooking for 6 minutes. Brush both sides with the peach glaze and continue cooking until the internal temperature reaches 165 degrees.
