I’ve made these several times. The first time, I wasn’t thrilled about them. Finally, I took the time to read the reviews and they were very helpful. I made them smaller, added some spices to the dough and used a melon ball scooper (brilliant idea from a reviewer!). Now I’m obsessed! They’re very addicting!
Adapted from a recipe on All Recipes website.
Ingredients:
- 2 cups extra sharp cheddar cheese
- 1 cup all purpose flour
- 1/4 teaspoon granulated garlic
- 1/4 teaspoon sea salt
- 1/4 teaspoon smoked paprika
- 6 Tablespoons chilled butter, chopped
- 1/2 cup Mrs. G's pepper jelly
Prep Time: 15 minutes
Servings: 35
Instructions:
- Blend cheese, flour, butter and spices in a food processor until dough is a coarse-meal texture and forms into a ball. Wrap dough in plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 400 degrees.
- Using the large end of a melon ball scooper, shape dough into approximately 1" balls and place 1 inch apart on a baking sheet.
- Bake in the preheated oven for 9 minutes, remove from oven; press back of the large end of the melon ball scooper into the top of each ball, creating an indentation. Using the smaller end of the melon ball scooper, fill it full or about 3/4 with pepper jelly, then spoon it into indentation.
- Place back in oven and bake until edges are golden brown, about 9 more minutes. Oven temperatures can vary, so your times may be different.
- Let cool before transferring.
